大蒜腦殼
（1）小滿前後，種在地里的大蒜長出了圓溜溜的腦殼，正是成熟的時候，可以收獲了。扯出來的大蒜腦殼剪掉枯黃的莖葉和下面潔白的根須，十個一把用稻草捆緊，就能上市銷售了。
（2）大蒜腦殼有紅皮和白皮兩種，蒜瓣有大有小。還沒曬乾的大蒜腦殼買回來後，剝去蒜皮，洗凈切碎，撒上鹽，上面放點辣子粉、雞精、花椒粉，再拿沸油一淋，拌勻後就是一碗開胃的蒜泥。
（3）剝幾斤大蒜瓣瓣，在水裡過干凈後，放少許鹽，再用瓶子裝好，放入糖、白酒、醋，以淹過大蒜瓣瓣為宜。蓋緊蓋子後貯藏，等一兩個月後再開蓋品嘗，就沒有酒味了，就連鹽味也被糖和醋取代，這種糖醋大蒜則是盛夏時節的一道好菜，不僅開胃，而且腸胃不好的人吃了後就不會胃痛和拉肚子了。

（6）夏天沒有大蒜苗也不要緊，大蒜瓣瓣切絲與肉絲炒、切片與肉片炒，炒出來的肉絲、肉片同樣蒜香四溢。大蒜瓣瓣還是雞丁和肉丁的配菜，倒進火鍋里越煮越香，幾乎浸透到主菜的雞丁和肉丁里，就是離開餐桌，走到戶外，也會聞到大蒜的清香。
（7）吃片片魚要放大蒜瓣切細粒，吃酸菜魚要放大蒜瓣瓣，一是可以去掉魚的腥味，二是可以增加魚的香味。細細品味，放了大蒜的魚更鮮、更嫩、更香，香香的魚湯也會被喝完。
（8）燒一把嫩辣子，去灰後與大蒜瓣瓣在擂缽里擂成漿，再放入鹽、花椒粉、味精，一直擂成辣子蒜漿後，倒在碗里，那就更好吃了。這種香是與生俱來的，不需要添加其他的香料。像這種自己加工的酸辣漿，才是地地道道的農家菜。
（9）過端午時，在粽子煮熟時放二三十個大蒜煮熟，在端午的早晨吃粽子時必須要吃幾個大蒜頭。只是老年人一直傳承下來的飲食風俗，是每個父母不會忘記的事情，他們會督促兒女們吃了後才放下心來。父母說，大蒜是消毒的，吃了後能把積淀在肚子里的細菌殺死。過端午時，父母還要擂一缽雄黃大蒜。那是過端午的晚餐必備的佳餚。父母說雄黃也是殺菌的，吃了後就會把寄生在肚子里的寄生蟲排掉，同時還可以防止毒蛇的進攻。沒吃完的雄黃大蒜，父母會用瓶子裝好，倒進白酒，如果碰到哪個肚子痛或者沾了草毒，就可以用雄黃大蒜進行治療。

（4）然而晚清以來，中國那深厚的歷史底蘊終於無法抵擋外族強悍的槍炮文明。由此，從「五四」對孔老夫子的批判開始，中國的主流社會第一次如此長久地撇開歷史去尋求新的出路。然而不幸的是，中國人，如此眾多的中國人，在丟開歷史的同時，也丟掉了自己的民族自信力。從近代對「洋大人」的卑躬屈膝到今天小老百姓的崇洋媚外，又有多少中國人從心眼裡認同「洋人」高己一等的觀念。有一位到中國工作的白人先生每當和他的華人老闆新到一個地方都要迫不及待地向大家介紹「這是我的老闆」，否則大部分人將不理他的老闆而圍著他轉。
